  • 1 eggplant, cut crosswise into 1/2-inch slices

  • 2 tablespoons olive oil

  • 1 teaspoon garlic powder

  • ½ teaspoon smoked paprika

  • ½ teaspoon Italian seasoning

  • 1 teaspoon salt

  • Step 1Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.

  • Step 2Place eggplant slices in a single layer on the baking sheet. Drizzle with olive oil and sprinkle with garlic powder, smoked paprika, and Italian seasoning.
